Sweet P’s New Cupcake

Our bakery has been quite busy baking for several catering events and parties. Lots of our baked goods such as pies, cupcakes, caramels and cookies are going out to fulfill orders. We have a big wedding event coming up this month for a long time customer located in Roseville, CA.

So it was a nice change of pace when my family was recently invited to a Cinco De Mayo party at a local park in the Rocklin area. The party was a potluck style get together complete with a pinata for all the kids. So, of course, we had to bring one of my favorite dishes, some fresh homemade guacamole with salty chips.  I also wanted to bring some kind of a festive dessert.  I love flan, tres leches cake and sweet corn, but a non-traditional dessert with a Mexican flair is what I had in mind. Our family loves churros! The State Fair, Disneyland, Costco, all the great places we visit have churros!  My youngest son and I love to share a tasty churro after a shopping trip to Costco. Armed with a truly festive inspiration, I wanted to spice it up a bit and do something different. Then I thought of a twist, what about a churro cupcake? I had not seen one before so I thought it would be a nice challenge, and I had an idea of how I would go about making some.

I started out with my own made from scratch cupcake batter base, then I added some cinnamon sugar to it.  Right after I took the cupcakes out of the oven I then dipped the tops in a shallow tin of melted butter and then in a cinnamon/sugar mixture.  I mixed up some Cinnamon Buttercream frosting. I was almost done but still needed a garnish. I always have some Tortilla Land, fresh, uncooked tortillas on hand so I put them to use. I cut one into strips and made some “miniature fried churros” and rolled them in Cinnamon sugar. They were the perfect cute little garnish I was looking for and I didn’t mind eating the extras.  Overall they turned out awesome! Everyone loved them at the party!
